One interpretation of Peat's dietary guidelines might be that we find ways to stop and remediate the world-wide degradation in food-growing soils (mineral depletion and burdening with chemicals unsupportive to human health) and food-growing methods (that put the plants and animals in high-stress situations). Quite a project, and very worthwhile, I'd say.
