Cant see anything at all on this forum written about this cheese, nor have I heard Ray Peat ever talk about it.

I can't seem to get much info on it.

Is it any good? There's a lot of it here in the U.K.

I don't know either... but if you choose to eat it, throw it on a grill or griddle. It's incredible.

We eat halloumi a lot in the middle east along with humus and pita bread usually at dinner time. As tyler said, grilled halloumi is freaking tasty. It has no acidic/bitter taste, but it can satisfies your salt craving very well.

We buy it locally from home-made stores and you can ask the seller if they are using animal rennet or vegetable rennet. Animal rennet is pretty safe according to Peat. Since we have no vegan or vegetarian folks a lot where we live, we have no restrictions to use animal rennet, which is a blessing. Salt is used and NO acid is needed (unlike cottage cheese for example) like vinegar, citric acid, or lemon which can be allergenic to some. So overall, I think it's safe if you know how they make it.
