Potatoes and Acrylamide

I would imagine acrylamide has probably been discussed at some point in the history of this forum, but figured I would share this anyway:

Probably not a concern for most peaters who tend to boil their potatoes, but still interesting.

Bumping this. Odd that certain topics go overlooked.
So this would be a concern with frying potatoes in coconut oil

Lol.. fermenting potatoes !

Just live :), and buy the right potatoes, or even better grow them yourselves.

They will turn like D on that picture without wasting your time on fermenting. Only potatoes kept below 4 degrees celcius will produce suger.

just thinking this over, Peat has stated several times that in the presence of a pufa oil does acrylamide form. Which seems more logical since acrolien is found in pufa and needs to oxidize. So frying potatoes in coconut oil is probably fine. If anybody else has some insights on this, please chime in. Coconut oil fries are a favorite to some of us :)
