I've noticed that almost always when I buy liver it has these dark red strings in it. They come in different sizes and shapes. At first I thought they were some kind of parasite but I've had them in livers of different animals (beef / lamb / turkey).
Maybe clotted blood?
Here's a picture so you know what I mean:
See the thing at the bottom? They don't always look this "wormy", they are often thicker, shorter or have a very irregular shape.
Does anybody know what those things are?
I'm not to worried about parasites since I always cook the ***t out of the liver anyways, but they are starting to freak me out.
