I don't like potatoes and rice. Can I eat cold pasta to get resistant starch?

You probably can - I think cooling it does increase the resistant starch.

It's probably not something Peat would recommend, though.

Peat's expressed concern about gluten for everyone, though some are more robust.
Peat has spoke favourably of the nutrition in potatoes, though he's concerned about starch. Some of us eat lots of them.

If your gut microbiome is good, and your gut has no particular difficulties with gluten, and the rest of your diet provides you with plenty of nutrition, you may be OK with some pasta.

Potatoes can be accompanied with various things to make them tastier, and varieties differ in taste, and badly stored potatoes can taste and be poisonous. Maybe you could try other recipes and varieties?
