Every time I take Lugol's iodine my thyroid starts to hurt. I heard somewhere that this could be a sign of thyroid disease but was never able to find a good explanation about what is wrong.

Does anyone have an idea what could cause the issue?

Do you need iodine?

According to Dr Alan Christianson, in the past most of the world got too little iodine, so they started “fortifying” or adding iodine to salt. This has been accompanied by an explosion in autoimmune thyroid disease.

“In the past, getting too little iodine was a problem for much of the world’s population. Many countries solved this problem by fortifying their salt with iodine. When they did so, that helped lower the rate of goiter among children. However, each country that fortified its salt with iodine has also seen increased thyroid disease.
In the largest review involving fifty studies, it was concluded that global iodine fortification has increased the risks of hypothyroidism and hyperthyroidism.11”

FORTIFICATION IN THE UNITED STATES

Researchers from the Mayo Clinic in Minnesota tracked the rate of Hashimoto’s thyroiditis in patients from 1935 to 1967.

Within two years, the doctors saw an increase in autoimmune thyroid disease caused by iodine fortification.12 Starting with the first decade after iodine fortification, they documented a 4,800 percent increase in Hashimoto’s disease. The earliest rates were 2.1 per every 100,000 persons; by the end of the study, it was up to 54.1 for women under 39 and 94.1 for those over 40.”

Iodine fortified salt is used at many restaurants including likely mcdonalds and burger king. If youre iodine sensitive you can react to their beef products even if you ask for no salt, i think the mixture of their beef just has lots of salt in it probably.
