Sensitivity to Carbs - Insulin Sensitivity (Not Resistance) Or?

Been following Peat’ish eating for 4 years (no pufa, 300g carbs, 80g fat, 130 protein. At first everything was great but my need for carbs constantly keeps going up and have to eat constantly. It seems like I have some sort of insulin sensitivity to blood sugar sensitivity (see attached continuous glucose monitor - balanced meals). I definitely do better with fats now but what would cause my blood sugar to be so sensitive? B vitamins and most supps give me hypoglycemia symptoms.
