There are data for the (vegan) Ma-Pi diet Ma-Pi 2 macrobiotic diet intervention during 21 days in adults with type 2 diabetes mellitus, Ghana 2011 https://onlinelibrary.wiley.com/doi/10.1002/dmrr.2519

Also, trials, such as this Reversal of type 2 diabetes: normalisation of beta cell function in association with decreased pancreas and liver triacylglycerol - Diabetologia at the Newcastle Uni (UK) lead by Prof. Taylor. It suggests a reversal following a daily 800-calorie diet for (at least) eight weeks. The idea is to allow the body to use up the fat that is deposited in the pancreas (+/- liver), and preventing it from creating insulin, until normal glucose levels return. The diet is strict, made up of soups, shakes and vegetables (mostly greens). According to the data, someone has to lose at least a sixth of their pre-diagnosis bodyweight.

Interesting. I saw this guy on a couple of interviews last night. Sounds good...I am curious. It's so restrictive, but, also temporary. Thank you for the info.
