Why does Ray Peat recommend low fat dairy? And I keep seeing the parmesan reggiano being highly recommended but I never see a low fat version.

He had mentioned in interviews that weight gain can occur (or is likely to occur) if you drink large amounts of full-fat milk. He drank pretty large amounts of milk.

I would also suppose that part of the reasoning for him was to keep PUFA as low as possible. Although milk is low in PUFA, eating large amounts of relatively low PUFA fats would still add up to a decent amount of total PUFA.

Get high-quality, raw, full-fat pasture-raised milk and never look back. Skim milk is for peasants who don't like fat-soluble vitamins
