Tonight I made some masa harina cakes fried in coconut oil. Ate them with watermelon and some milk with gelatin. But my calories were kind of low for today and the cakes were so good so I made myself.....8 more. My issue is that about 10 minutes afterwards I got intensely hot....it didn't feel normal. I've heard about the potential mycotoxins in masa harina. But masa is the only starch I can tolerate (as far as I know) and I'm trying to bring in a little bit of starch into my diet every week especially as my physical activity is increasing. Lately I've been wondering how we can determine if something is promoting metabolism by warming or if it is promoting a stress response. Any ideas?
