Hi! Q About Coconut Flesh

What is Ray's opinion on coconut flesh? There are some I eat it daily, presuming the whole food is is better than the concentrated oil. The flesh comes from within a shell, so there are probably not much toxins in the flesh.

People were talking about it being hard to digest over here: Is Coconut A Superfood?

And someone said Peat wasn't a fan of it. I'm wondering why. Thanks.

Mature Coconut flesh is extremely difficult to digest, if not impossible. That’s why peat isn’t a fan. He’s a fan of easily digested food. The soft gel like flesh from young Thai coconuts is preferable, if you’re gonna do anything coconut.

I fear that the coconut I eat is mature. It's frozen pieces, and when unfrozen they're still pretty tough. I chew them pretty good though, and while I have IBS symptoms, it doesn't seem to be hard on digestion but it could be.
It's difficult to judge how the digestion is of foods for me.
