I am not looking to replace all of my meat with gelatin but if I dropped let's say just one portion of meat out of the 3 that I have daily and used gelatin instead, am I missing out on some vitamins and minerals that I need to get from somewhere else?
What if I replaced two of my meat portions with gelatin?

Yes you will miss out on nutrients If you just do pure gelatin powder. However is you do non muscle meats you will get the benefits you are looking for. Gelatin is more of a protein powder than a food source in my opinion and should be taken along side muscle meats to balance the amino acid ratio. I recommend foods like bone marrow, liver, intestines(maybe, I don't know much about this one), etc for a meal replacement.

probably , taurin , zinc , b12 ,carnosin.

make sure regularly take liver.

in short term doing all gelatin maybe is good but later include some meat.we need some non-peaty aminos i guess.
