GELATINOUS
Chicken Wing & Fresh Dandelion SOUP

Here is was my quick lunch today using the gelatinous chicken bone broth from the wings I made for dinner two nights ago, and the leftover wings. I just sautéed sweet onion in butter, and let it caramelize for about 15 minutes, with salt, and added in the chopped meat, and the skins, from the wings, as well as a bunch of fresh dandelion, all chopped up, and the zest from one of my tree lemons. It was a perfect pairing to this energizing rainy day! I paired it with a spoonful of raw honey to balance all of that protein and sleepy gelatin.

I just posted the recipes for the 3 ingredient wing sauce and mayo free Ranch/bleu cheese dressing on page 9 of my "Peaty Proteins" thread linked below.

That looks so amazing! You are literally the backbone of this forum!

Mamakitty you just made my day saying that! I have a really big smile right now. When I have wing night I just eat wings. I like simple meals. For these Buffalo wings, I would Suggest having some sweet cherry tomato halves, cold cucumber, zucchini or orange or red bell pepper slices, and they are all fruits!

Aww! I’m so glad I made you smile. I read some of your other posts and I have to tell you I’m really impacted by what you have been through recently. I don’t know how you do it but your strength is admirable.

Re the wings, I was so inspired by this recipe, I ordered soy and corn free wings from my local ranch. Can’t wait to make these soon! I know you may not approve but I will probably add either baked fries or some rice on the side, because I don’t get full without starch.

Disapprove! No way! I enjoy my occasional starches too, it is just not a main part of my diet. Let me know how they turn out!

That is so sweet that you take the time to get to know me, and let me know that. I imagine if I weren’t in good health I may have taken things worse than I have. I have learned how good healthy crying actually is for health, so all those years repressing them, was not a good thing. In every bad place in my life I just try to look for the good that is still there and focus on it instead. Early last year when I was really overwhelmed and everything seemed like too big and steep of a mountain to climb, I heard a quote that really helped me. How do do you eat an elephant? One bite at a time. I just take small bites everyday, and I think I am on my second elephant now! Thank you for being so kind mammakitty.

Oh, that’s amazing! Thanks for sharing the quote, because I tend to get overwhelmed quite easily and I’m not as strong as you are. And you are right about crying too. I get hormonal in my luteal phase and cry at even stupid cartoons. Yesterday, mommy (me) had waterworks going at coco melon, ha! I am sincerely struck by your loss, but I always enjoy all your posts, especially your recipes! I’ll let you know how my wings turn out, I think next week.
For valentine’s day I’m planning on making stuffed Cornish hens. Fingers crossed they turn out good haha

Oh I use to make Cornish hens! It’s been decades though. I use to make an orange sauce to go with it, like the kind they make for duck. It sounds wonderful! I am looking forward to hearing how it all turns out :)

That sounds yum, I might do that. I did duck a l’orange for thanksgiving just to change it up a bit, and everyone loved it lol. I’ll report back on the hens :)

You’re too cute 😘
Hey Rinse, I had been meaning to update you on my Cornish hens but had lost this thread in my notifications lol
The birds came out excellent for valentine’s day. Hubster loved it. I didn’t do the orange sauce, went with stuffed birds and side gravy instead!
Anyway, today I am making my soy and corn free pastured chicken wings using your recipe. Excited!

Thanks for reporting back mamakitty! I have been soaking my wings in water since last night to make today too! I like to soak them to get the extra cloudy stuff out of them for a cleaner broth when I boil them. Lately I have been smearing a good amount of salted butter on the baking sheet before placing the wings skin side down, then putting liquid coconut oil on top before salting. That butter really adds flavor! Let me know how yours turns out.

BTW I made broccoli cheddar soup yesterday with the broth from my last batch of chicken wing broth.

Hey Rinse.... do you use the coconut oil that has had the taste taken out? I wonder how they do it? Because I only have the solidified unrefined coconut oil and the taste is very strong and I don't like to sautee my corn tortillas in it... it makes everything taste like coconuts! Thanks for all your ideas.

Oh I can’t stand the taste of coconut oil Franny. I only use the unrefined coconut oil on my skin or when I am making curry. I use the unrefined oil along with milk and sometimes a little cream to replace coconut milk. I use the refined coconut oil to replace vegetable oil in making my chocolate cake and for frying things in when I want a neutral flavor. I attached photos of the brand I am using and really like, with absolutely no traces of coconut flavor or smell.

As for making flour tortillas, I have had no luck with the texture, using butter, refined liquid coconut oil or in solid refined form either. The best flour tortillas I have made was using canola oil. Fortunately it only takes a tablespoon or two of it in a dozen tortillas so it is worth it, until I can figure out something else.

Hey thanks! I was talking about lightly sauteeing corn tortillas, not making flour tortillas... they are not my fave. I know Ray talked about nixtalamized corn tortillas and then I found out that all processed corn tortillas are generally nixtalamized corn but just putting them over a flame on a stove doesn't quite make them as tasty as pan frying hence my interest in flavorless coconut oil.

I fry my masa chips in the refined coconut oil and they are perfect. I have been frying my French fries in beef tallow, like Mc Donald’s originally did, and got famous for, and they are out of this world! I think I might fry a few masa tortillas in the beef tallow and see if they are even better too. I will report back Franny!

Ok Franny I fried the masa tortilla in the “Epic” brand beef tallow last night, and it was delicious! I put some thin slices of grass-fed cheddar on it right when it came out of the pan. I would say that the tallow added more flavor to the tortilla, but nothing beefy detectable.

Thanks for that! So do you think it was more delicious with the beef tallow rather than refined coconut oil? I do love corn tortillas but have not made my own from masa. I even have a tortilla press and everything but just have not gotten around to buying the masa. Good on you for trying out these ideas!

Ok I fried a few tortillas up just now, 2 in the beef tallow and two in the refined coconut oil, and my son, not knowing which one was which, chose the refined coconut oil fried one. I agree with him. The refined coconut oil one fried up faster and crisper and had more of a clean masa taste. We both agreed they were both good though. The things I do for you Franny! 😘
