Found the results from the study regarding the observed change of serotonin content after pasteurization of pineapple juice:


Content ± SD [μg/ml]


Fresh fruit: 24.27 ± 0.50

Fresh juice: 22.07 ± 0.24

Pasteurized juice: 18.63 ± 0.57
