Avoidance of irritants (many plant-compounds) is key in my opinion for calming the immune-system, especially when it comes down to gut problems.

Pair that with highly nutrient dense animal foods like grass-fed beef liver, heart, muscle meat, bone broth, wild fish and some easily digested carbohydrates.

I think by doing so you replenish many vitamins and minerals.
You might want to check the vitamin D status as well. Dr. Terry Wahls recommends vitamin D levels around 60-100ng/ml for autoimmunity.

I had UC before, I have four things to say:
1, cyproheptadine
2, Cascara Sagrada: taking it for longer time made my gut like a steel and helped me handle large amount of milk, oranges
3, gelatin food every day
4, magnesium: taking this for the first time stopped the symptom within hours.

I started from the usual ray peat recommendations, like lots of carbs, high quality proteins, thyroid, aspirin, coffee, avoid easily undigestable foods
do you eat cascara in supplement capsule form, or just dried powder?

Maybe try getting vitamin D up in the 80-100ng/ml range. It has a lot of therapeutic potential for a lot of chronic inflammatory disease.
I have a few colleagues in germany who had massive success with vitamin D therapy for fibromyalgia, IBS, allergies, MS.

I am so inspired that I am trying this for myself now.
