What happens to PUFA in Nixtamalized corn?

I planted a bunch of corn. I harvested more than 3 5 gallon buckets of dried cobs. I want to nixtamalize the corn to make it edible and make like a masa ground beef gelatin and cheese shepherds pie. Does anyone know if PUFA is nuetralized by the nixtamalization process?
