You are not wrong that sugar beets contain nitrates and can increase endogenous NO, but I think that only applies to the sugar when actually eating the sugar beets.
The Processed sugar derived from beets are chemically identical for the most part to table sugar and are completely safe and I really doubt nitrates are an issue in processed beet sugar.

I wouldn't consume any form of refined sugar until in excellent state of health.
