Are white sweet potatoes ok?

I heard that the regular orange sweet potatoes contain too much beta carotene which is toxic, is it ok to eat white flesh sweet potatoes? I'm talking about the ones that usually have purple skin, they don't have that much beta carotene pretty sure.

they're pretty good, but some things to consider
high in oxalates- consume enough calcium
B6
thiocyanates- consume enough iodine + preparation method
polyols- if you have FODMAP sensitivities, the mannitol can be an issue
mold- sweet potatoes are vulnerable to fungal infections and they require lots of sun exposure when stored. if they're imported from far away and stored in dark and damp conditions make sure to inspect them very closely

The fiber can support bacterial growth

You can just experiment with things and see how they affect you by seeing if they give you gas and bloating or how they affect your thyroid function by measuring your temperature and pulse rate

they are very filling and nutrient dense
may causes bloating depending on your diet (if you eat low fiber and high dairy, your fiber tolerance will go down)

when I make some i do this way :peel them, slice them and cinnamon+salt, oven for 1 to 1.30h , 200°C
