Perhaps this has been discussed before and I missed it, but an excellent way to take in more gelatin is by adding it to a homemade cocoa. Gelatin gives cocoa a thickness that is much better than typical recipes. This also gives you the benefit of cocoa polyphenols and milk. I do it by taste, so just heat milk and whisk in sugar, a high quality cocoa powder, gelatin, and salt to taste.
I also add cinnamon and cayenne.

I like to do it like that too, sometimes I add a bit of 40% cream and use agave or maple syrup instead of sugar. A slice of homemade rye and sorghum bread with macadamia nut butter with that before bed...
