What is the most secure / anonymous email service that isn't owned by big tech?

If you use an anonymous email address from proton or tutanota, and correspond with somebody with a gmail or other email account that is known to read emails, what’s to prevent these ease-dropping companies from eventually identifying you? (If that makes sense.)

I guess the short answer is use encrypted email only.
