That is a high percentage of fructose in pears. It makes me wonder if that is what makes pears a cough remedy, as practiced by Chinese:

How difficult is it to isolate fructose from cane sugar? Would the fructose be free from allergens because it's not made from corn? I was thinking how neat it would be to have an allergen-free fructose and be able to use it to cure diabetes. I just hope it would not cause fructose to be banned by the Codex Alimentarius, would it? At any rate, I would most like to "home brew" fructose, if that is possible at all.

No I haven't. I'd like to try it, maybe I didn't look hard enough for it on Amazon.
