Masa cake

Just made this yesterday for the kids, they love it.

Ingredients:

300g masa harina (Bob's Red Mill is safe as no GMO. No Maseca as it is GMO!)
Pure water (didnt measure amount, not necessary)
1 1/2 cup white sugar
1 egg
5 egg whites
1 tsp baking soda

Preheat oven to 200C.
Put the masa, baking soda and sugar in a large bowl. Add the egg and then mix in water until you have a dough like consistency.
In a seperate bowl, use a whisk (or mixer) to froth up the egg whites until they are stiff (volumous).
Pour the egg whites into the bowl with the dough. Using a large spoon, fold in the egg whites slowly into the dough until it has blended together.

Place into a baking tray (silicon preferred) and into overn. Bake for 60-90 mins (or until golden brown).
Remove from tray (why I suggest silicone) and let stand for 20 mins. Eat. Enjoy.

Bet this would be a great base to fill with fruit and top with whipped cream!! YUMMY :) I have to get some..as much as I love cake.

Would be great to find a pound cake like recipe using butter and/or coconut oil.
