Ingredients:
1 cup of nixtamalized flour into a medium bowl
best to use Bob's Red Mill or this:
Chef-Grade Masa Flour (Harina) - Masienda
1 tablespoon of no-aluminum baking POWDER (Rumsford)
1 teaspoon of fine kosher salt
1 tablespoon granulated white sugar
3 eggs beaten
1 cup water
2 tablespoons of butter (optional, I use grass fed butter) cut into small pieces
Put the dry ingredients into a medium bowl and stir to combine.
Then in a second bowl add the eggs and water. Beat and combine.
Now add the wet to the dry ingredients and mix everything up with a spoon.
Now scrape into a 10 inch saute or fry pan. Optional: put pats of butter on top of the batter before baking
Put into oven set at 400F for 20 minutes (check with thermometer, should be 190-ish, no need to pre heat)
This makes a tasty platform for jam, more butter, anything you want. It can be very satisfying and doesn't cause me any gut issues at all.
Ideas:
Add curry powder (toast it in a dry pan first) to the dry ingredients first
Or fold in finely chopped hot peppers (serranos) to the batter
Or fold in chunks of cheddar cheese to the batter
