I moved to Costa Rica for a bit, so I went to the organic store for the first time yesterday and they have this vanilla ice cream from grass fed buffalo’s with 0 PUFA and egg yolk, ate the whole tub in about 5 seconds lol. Was absolutely delicious.

On a side note the organic store here (Green centre San Jose) has much better stuff than the organic stores in the UK. We have whole foods in the UK but the stuff they have is kinda shitty compared to the American one.

That's very interesting. I wonder if buffalo milk is naturally very low in pufa, or if they recognised a market demand for low pufa products and did some specific processing to isolate and remove the pufa.

It has some pufa, but definitely less than ice cream made with egg yolks. If it's less than .5g they just put 0. I think they can round down from the nearest half gram.

So for example if the lab results were:

9.38G Total Fat
6.45G Saturated Fat
.23G Polyunsaturated Fat
2.7G Monounsaturated FAT

They would label it as

9G Total Fat
6G Saturated Fat
0G Polyunsaturated Fat
2.5G Monounsaturated Fat

Idk I'm not as worried about pufa amounts these days but regardless that looks like a wonderful product.

I'm more worried about "estabilizante" than PUFA ...
