Ray says we've become conditioned to preferring aged or decayed meat. So, in this case, it might not work to just go by taste preferences.
I will admit that I hardly ever buy the grass fed organic, or whatever it's called, meat. Unless it's on sale. I'm not able to get the undecayed meat.
So, gotta work with what's on the menu, right?
