I saw this at civilizedcavemancooking.com (the recipe there is called lemon-bars) and I just make it sans the crust so I omitted that part.
It's so simple, so easy and SO yummy. I've always loved pudding/custard type desserts and this is one of the best I've had.
6 whole eggs
1/2 cup raw organic honey
1/2 cup coconut oil
1 cup lemon juice (8 lemons)
Whisk your eggs, honey, and lemon juice together in a small sauce pan
Place on your stove over medium/high heat and add coconut oil
Stir until coconut oil melts and then continue stirring until the mixture thickens and starts to bubble
Once thick, remove from the heat and place in a bowl in your refrigerator to cool
I sometimes stick it in the freezer right away cause it's so good I always want some immediately and it tastes best cold but it's even good warm.
