Coconut Mango Gummy Snacks

    I made this and it tastes very good, especially with a ripe mango.

    Ingredients:
    1 cup coconut water
    1/2 cup fresh lemon juice
    1 very large ripe mango or 2 smaller ones
    6 TBS grass-fed gelatin powder
    2 TBS honey or sugar to taste

    Peel ripe mango and slice it. Puree mango with a mini blender or small food processor. Set aside.
    Combine coconut water and lemon juice in small pan and gently heat the mixture until it is just warm to the touch. Remove from heat.
    Add gelatin powder and whisk thoroughly. If there are clumps gently heat mixture again.
    Add mango puree to gelatin and whisk to combine. Pour mixture into silicone molds or glass dish
    Place in fridge for one hour or more to set
    Remove from molds or cut into desired pieces. Store in fridge. Only good for 3 days as the coconut water spoils quickly.
