“PEATY” BROWNIES
1. Collect ingredients. In my brownies I like to use sprouted oats, so I just grind down the oats into a flour in my Bullet or Ninja blender to make 1 cup. Preheat oven to 325 degrees.
2. Melt 2 sticks of butter in a saucepan with 4 ounces of unsweetened chocolate squares, and heat on medium low heat till melted. Turn off the heat and add in 2 cups of sugar, and let cool a bit, maybe 10 minutes.
3. Add in regular oat flour, or the sprouted, and stir till combined.
4. Add in 4 eggs, however many macadamias you want, coarsly chopped, 1 teaspoon vanilla extract and 1 teaspoon flaky finishing salt and stir till combined. In my brownies today I added in the zest of two organic oranges.
5. Pour into a “prepared” pan. I have a brownie pan that makes every brownie have chewy edges, and I just butter the inside of it well, no additional flour necessary. Bake in the oven for 45 minutes, and cool for about a half hour. Cut into pieces while still a bit warm, loosening a bit from the sides, and let them finish cooling completely. These are so moist and a wonderful breakfast snack addition! I have been making them for 30+ years!
Oooh or bake those meringues for a “Peaty” crunchy sweet! I see chocolate, vanilla and strawberry ones in my specialty market down the street from me. Great idea Zsazsa!P.S. one can bake a ton of meringues with the remaining egg whites

I made cheese enchiladas tonight for dinner, using masa tortillas. I like this basic recipe because there is no flour or cornstarch to thicken it, and it has bone broth in it too. You can play with this basic recipe by swapping out the olive oil for butter, like I did, add less tomato sauce and more bone broth, add in extra seasoning like chipotle or ancho chili powder to make it more spicy or chopped raisins, cinnamon or cocoa powder for an exotic depth of flavor. I like to use the sauce for other dishes as well, which I posted pics of.

I simply adore blood oranges, unfortunately I can't find them where I live now...I have been having daily fresh orange shakes, using just the juice, sometimes the zest too, and the last two nights I used blood oranges, and it was even better, looking like a strawberry milk shake.
I squeeze out the juice of two to 3 oranges, and strain off the pulp, add it and ice to the blender, along with a big pinch of flakey salt, a neutral tasting raw white honey or sugar, and an equal amount of milk as the orange juice, and blend it. Adding in the zest of an orange and maybe a few drops of vanilla extract isn’t necessary, but for company sometimes I will add it.
