High mycotoxin levels present in corn, even masa harina

If I have somehow pursued anybody to not eat masa harina or it less of it because of mycotoxins (mostly fumonisins), I think I need to do an update.

In the case of the fumonisins, nixtamalization reduced their content, but the fumonisins that remain were turned into a hydrolysed form of fumonisins. This forms is much less toxic. So nixtamalization does make corn much safer. I will add a study to back this up.
