The “plateau” (?) gene and protein that is deficient in animals that have a very quick aging process: that’s largely a phosphate-handling protein. And the rapid aging produced by lacking that protein and gene involves accumulating excess phosphate.

And the Gerson diet was extremely high in the other minerals, especially potassium. And the diet always had the amount of sodium that you would have in juice, leaves and fruits and vegetables and so on. So it was always a physiological amount of sodium. But often, a very excessive large amount of potassium and magnesium. And i think that these were the essence of Gerson’s success, rather than just the reducing sodium. Because when you look at particular experiments, sodium can stimulate the respiration of the cell and cause it to unswell, give up excess water. If you lower the other minerals and give it too much sodium, you can force it to swell, to take up water. But sodium’s normal physiological function is to act as a stimulant. Calcium tends to do the same. But the cell normally is excluding sodium. And it perceives sodium as an irritant ( or stimulant), and revs up it’s oxidative metabolism when it has a little extra sodium. And the increased oxidative metabolism produces carbon dioxide and restores the balance. So, when we’re in balance, the right amount of sodium is increasing energy production and decreasing cell water content. And much of the stuff hadn’t been specifically examined during Gerson’s lifetime

Gerson saw that even after restricting salt to his patients, the kidneys kept evacuating it in huge amounts. Which means the body was trying to get rid of accumulated excess salt.
Ray himself admits excess salt causes tissues to swell up.
But , rather than telling it like it is, he swerves around the truth and diverts the attention away from it's negative effects by pointing out the great amounts of potassium, calcium and magnesium in the juices and the vegetarian diet.
Which, in itself , is true.
But only part of the truth.
Ray really loves being a contrarian.
Clinical evidence be damned.
And a lot of people here are feeling better with eating a higher salt diet.
Max Gerson died in 1959 at age 78. As far as I know refrigeration started to displace salt as main means of food preservation after world war II. Salt intake must have been a lot higher back in Gerson's time than it is today.
The point of the matter is Gerson cured people from tuberculosis with a low salt / low fat diet.
He was seeing his patients evacuating huge amounts of salt through their kidneys for days/ weeks after placing them on the diet.
Clearly, their bodies were seeing salt as a poison to be evacuated.
Ray's just posturing around the facts for the sake of being a contrarian when he knows fully well Gerson couldn't have cured these people without restricting their salt.

RP: Yes. And probably a fairly low protein diet is very good for health, in the sense of living longer. But for maintaining tissue renewal, you can’t go below a certain amount of tryptophane, cysteine and methionine. Those are rapid turnover proteins.

it is complicated a little bit, while it is good to have fun and eat whatever feels good you may eat alot of sugary and salty food which is good but you also may get a lot of pufa and also there is a chance to become deficient in some vitamins like vitamin A and some of other nutrient.RP: Just keeping stress down and fun up. Judging food by largely how it tastes rather than by what the experts say.

how is that possible? salt can accumulate/crystallize somewhere in the body?!
