Speaking of hughes geosyncronous satellites, they use a dish always pointed in the same place. Latency sucks because they are so far away.
starlink sats are much much closer, but because of that they move across "cells" like in the map posted.
The saucer thing used for tracking the starlink satellites is not a dish, it is a phased array antenna, similar to your router at home with multiple antennae.
The saucer phases the antennas to track the satellite across the sky until the next satellite comes into view, and hands over data transfer to it. Similar to how you drive with a cellphone and connect to new towers without losing connection.
