I am finding some yummy ways to eat those Ray Peat recommended bamboo shoots. One way is, I soak them in milk, ceylon cinnamon, sugar and a little pinch of salt for an hour or two. Last night we drizzled them with little olive oil, like the carrot salad, and them added in a good amount of pineapple juice. I let it marinate for a half hour or more stirring occasionally. Be sure to rinse the bamboo shoots well before making either of these recipes. I like these two recipes better than the carrot salad.
