I spend a fair bit of time hopping around nutrition YT because it's what I do my Master's research on and god, there are so many people out there relying on stressful ways to lose weight.

Well, it does work for weight loss. And it's popular, so people tend to be more willing to do it (herd mentality). A lot of people don't understand the destructive effects of stress and if they do, they don't see stress from a diet as stress in the same way they do for lack of sleep or a demanding job.
