Why Is It Again That Sugar Can Help Allergies But Starch Doesn't?

Like for example, coke and sugar can almost immediately suppress an allergic response but eating rice with a meal doesn't.

From what I know, if blood sugar falls then an allergic reaction can be triggered but doesn't starchy carbs also turn into sugar? Why doesn't it produce the same effect?

what kind of meal?
white rice doesnt cause allergic response.
its the unstable bloodsugar that causing stress.
But sugars and protein can also crash bloodsugar hard if not consume the right way.
