The crazy thing about this is notice the “Organic Cricket Flour”. Going after the health food crowd. Time we read EVERY label now. Have been doing it for like 30 years as a hobby, but NOW it is to protect my life.
My inital thought was that there is a large facility (for lack of a better word) in Canada where they are currently raising crickets indoors (see) and there is a need to find a use for them buggers. I suspect that the flour is considered to be an inexpensive filler that they can use to beef-up the protein content on the packaging of their junk food. Eventually, I expect them them to open a side door of the facility so that they can sell crickets with the label 'pasture raised' like they do with chickens.

I do not know how long it takes crickets to mature; but I assume that they currently have crickets out the wazoo. Hopefully, those crickets do not make it to the cricket flour mill. :D
