Interesting video, Hugh. It does sound like it is less processed.
According to the study, the polyphenols "might" help prevent Alzheimer's from developing decades later, but they also repair present synaptic damage. It was interesting that there was no effect at all with Dutched (alkali processed) cocoa.
(I really am using cocoa now because I like the taste. Don't know if it makes me feel any different.) If it will help prevent synaptiic damage in the future, well, that's another plus! I have stopped using Dutch cocoa though.
