What to eat with ground beef?

Can I ask your age? Do you think you are just a little overweight or more? When you say active do you mean get the heart rate up and break a sweat? I know when I eat more carbs in the form of potatoes and bubbly white wine (prosecco), my girth is growing. Plus as I am almost 60 I need 20% less than I did 8 years ago. But also I am not walking 4 miles a day as I have been, gotta get back to that 4x week or more. Chopping wood though, as usual.
I am 45, people would say I am lean but I want to be ripped so would like to drop 3kg. I hike up a mountain 1 hour everyday

So you are fine! really... I worked with a Chiro in Juneau, Alaska, Dr Cory Pavitt, and he was and maybe still is a high level competing natural bodybuilder, but into strength also. He would count his almonds whilst whittling down his fat content pre contests. NOT normal, and certainly not particularly healthy but he did it. Then at more 'normal' after contests. Keeping lifting and controlled diet made him 'look' more ripped for the show. Same strength with a few pounds of fat on him!
Maybe just switch your carbs around to see what you 'burn' more cleaner. Rice/potatoes/Carrots, etc., watch the veggies as some do have a lot of carbs. My wife counts calories and is more on that side. I know I am a bit meat heavy in general in my diet, maybe protein heavy, but have switched greatly in the last 5 years. We also do cow bone broth 5x week nightly. Make a big batch and fridge it. Then add miso and cilantro or chopped green onions. Can be fatty (Fridge helps to cut off the top solid fat layer) but lots of glycine and other good stuff.

One work out sort of fun thing item I set up is a ‘pull up bar’ just about out of reach for my hanging therapy. Recovering from back injury. (It actually is an old shovel handle cut down to about a metre and hung up with rope loops on a rafter.) just hanging for 10-30 seconds at a time is good for traction and builds strength. Can do pullups too.
I put it just out of reach for me, so if i grab it with one hand my feet are barely touching the ground but support some weight. This is a great aid to stretching and gaining strength in the back as well as all upper body. It is always there so can do it 10x or 20x day randomly. ;-)

I have never heard of hanging, reminds me of monkey bars as a kid. I can't do that anymore and yet it used to be so easy

Exactly! Of course You can do it if you want to... just takes practice.

So I maintain my weight on 1300 calories which means my 3 meals are very low and I don't always feel satisfied. I am active and tried eating more but I just gain weight. I am unfortunately very short
Oh I wish I maintained on so little cuz food is expensive and not everyone is willing to eat 700-800 calories of fruit and dairy per meal. Maybe doing a milk and fruit experiment would be easier for you since you don’t need ginormous fruit milk meals

Won't I be starving? I am trying to come up with a plan on MFP but not doing very well. Do you just drink a glass of milk and eat the raw fruit on the side?

i make sure to eat 2500-3000 calories on drink 3-4 cups of milk daily sometimes an ounce or two of chees. Not sure if YOU will be starving but I am completely satisfied on this diet. i love a glass of milk with a giant bowl of ripened mangoes and dates. I love snacking on goat cheese and apples

I suppose it is full fat milk? That is probably way more filling than the lower fat varieties. Cheese and apples sounds delicious too. I will give it a try and see how I go. I will need to adjust to having less volume in my meals initially. I am so fascinated by Ray's change with regards to protein. I would love it to work because of the price of meat nowadays. Dates are pretty cheap and so are kiwifruit here. I love the gold variety. I also really love prunes! People think that's strange but their texture seems so decadent to me, like a medjool date

It is not full fat milk but it doesnt matter so much becuase it can be full fat if you choose. The goal of my experiment is to keep protein low while getting adequate calories which is at least 2500 weekdays and 3000 on weeekends. I can share a breakdown, I separated foods by category in this example but normally i eat milky coffee with my fruit meals plus a snack of fruit and goat cheese as its my favorite. Remember this is not the order of how i eat the food lol. 2 oz goat cheese 160kcal, 1 cup of ice cream 240 kcal, 1% milk 3 cups 330 kcal, 4 large bananas 484 kcal, 12 dates 798 kcal, 3 large mangos 603 kcal= 2615 kcal with a breakdown of 564 grams of carbs, 37 grams of fat, 55 grams of protein.

I also know a lot of people are saying they cant eat fruit but for MY body it is amazing, i do have to make sure the bananas are spotty and ripe but they are definitely not a staple as I rotate fruit quite a bit, i love all of it but especially tropical fruit...mmm pineapple and mango. Peaches and cherries are good at the moment so enjoying those. And dates and goat cheese sound weird together but I LOVE the tangy cheese and super candy sweet dates together.

and the bit of annoying mucus I have had pre Ray peats" cosmos aligned diet experiment" has completely disappeared. Feel like i can breathe deeper and easier :)

and yes I have been able to save a lot of money as prices of meat continue to skyrocket. I have found fruits to be pretty cheap in comparison especially when shopping in farmers markets, mexican and asian grocery stores, and buying the fruit that is on sale at the grocery store. Got cherries for 1$ a pound yesterday so im thrilled

AND I FORGOT TO MENTION this experiment with the calories mentioned above I have been getting ONE gram of PUFA per my fitness pal. I can see why Ray says he needs less thyroid meds when eating less protein could be less PUFA correlate? as even super lean meat and egg yolks still has quite a bit of pufa so removing these naturally would increase metabolism

Ok that all makes sense now. I bought 1.5% milk yesterday with kiwi, bananas, oranges, apples, dates, goat cheese feta, valrhona cocoa powder and decaf coffee because i get a stress response from normal coffee. I will eat from these items and see how I feel. It all sounds so delicious

I think it’s VERY important to eat enough calories. And track not just eyeball. Also I’m not recommending this to anyone I just wanted to do a self experiment per ray peats cosmos Aligned diet and cut my protein in half like he has to see what would happen. And I feel great . Self experimentation is wonderful

I believe I feel the best now that I've felt in my entire adult life and my lifts in the gym are definitely better than they've ever been before.

The recipe is as follows:

12 ounces 73% ground beef (I like Aldi store brand)
1.5 cups whole wheat flour
1 heaping cup water
6 tablespoons gelatin
1 tablespoon calcium carbonate
2 tsp cream of tartar
1 tsp baking soda
1/2 tablespoon salt
2 tablespoons crushed red pepper (for taste)

Mix the dry ingredients. Add water and ground beef. Mix thoroughly. Make 1.25 inch diameter balls and place on cookie sheet. Cook on 400 for 20 minutes. Flip and continue cooking on 400 for 10 to 15 minutes.

I call them "beef noogies" or just "noogies".

Previously I used milk instead of water and 8 ounces of beef plus 1.5 cups of shredded cheese, instead of 12 ounces of beef. I'm always tuning things though and right now I'm experimentally reducing my dairy a little. They're definitely better tasting with the milk and cheese than without.

I don't really eat them with anything else though I do occasionally have some liver, eggs, beans, lentils, or rice.

I use whole wheat flour because I can find no other carbohydrate that performs even close to as flawlessly for me (and I've tried a BUNCH).
I just made them with grass fed beef, einkorn flour, parmesan cheese and milk. I realized last minute that I didn't have cream of tartar so I used arrowroot powder. I may have also made them a little too large, so they lost the ball shape a bit. VERY tasty and satisfying. I also added some turmeric , thus the slightly yellow color.

For 5 months 90% of my calories have come from beef balls (think sausage balls except with beef). I mix 1/2 pound of 73% ground beef with 1.5 cups of whole wheat flour (also gelatin, calcium, crushed red pepper, salt, baking soda, potassium tartrate and water) . I've spent 20 years experimenting with every style of eating I could find and this is the only thing I've ever managed to do for 5 months. I've never found any approach to eating that worked THIS well for me.
I just wanted to come back and tell you that I have been making your beef balls every week since you first wrote about them. Sometimes I add milk and some different herbs and I think they are delicious. I can go anywhere with them, they are portable, filling, not messy and freeze so well. It's so cool to meal prep and then forget! I always have nutritious food ready

Hmmmm… I know a friend that has been wanting to collaborate with me for several years, when I haven’t cared. She works for ESRI in international marketing, and I am gonna see her Thursday just for fun. I will give her my pics and let her go with it. I have been pushed into this corner for so many years with people wanting me to start a restaurant or write a cookbook. Thanks for the subtle nudge Old Irenaeus 😘
