What causes shellfish allergies? Iodine? If so how does it work exactly? Can it be reversed?

There is often a lot of histamine in shellfish, so it doesn’t have to be the iodine. Have you tried eating super fresh shrimp, just caught and boiled? If you tolerate the super fresh better than shellfish from the store (frozen), then it is likely the histamine you mostly react to.
