Wanted: Recipes for Soups based on Bone Broth

As I was bitching and moaning to ARK,
the straight bone broth is...how shall I say...
sort of lacking.

But it would seem to have been, historically,
the basis for countless great soups.

So I gotta think there are great, Peat-okay soup recipes lurking out there!

I don't know what Peat thinks about onions exactly.
They would seem to be acceptable, especially cooked.
What about a french onion soup based on bone broth?

And I was thinking of an egg drop soup.
But that might be better done with chicken bone broth,
and we (as in "me") are still a little confused still about the efficacy of
bone broth from chicken bones...
...but if chicken bone broth is deemed okay,
egg drop soup or that greek egg soup would seem to be naturals.

I guess Peat wouldn't like miso...?
Otherwise, miso soup from bone broth sounds like a winner.

In general,
I don't see the harm
(from a Peat point of view)
of adding celery, onion, and carrots,
--and greens--
to the stock for flavor,
and then removing before eating.

Ideas?

I read somewhere him stating that onions are fine. I personally just stay away from cruciferous veggies and greens and eat all kinds of fruit like veggies, tomato, zucchini, yellow squash, carrot. Celery should be fine, as you said if you don't want to eat the fiber just toss after cooking. You still get the minerals and flavor. Same for the greens.

Vietnamese soup...broth, rice noodle, sliced beef, Thai basil, culantro, lime, bean sprouts.....not sure if all would be acceptable on strict Peat diet

Thanks for your welcome! Have been lurking. :)

Is the noodle (rice, water) or the herbs bad? Chili is bone broth, grass fed ground beef, onion, tomatoes, seasonings. Are most spices bad?

These are things that come to mind and not being so Peat Friendly,

"The basil, rice noodle, cilantro, bean sprouts."

The basil and cilantro could be removed after seasoning, rice is OK once a week maybe but I wonder how they make the noodles, as in, what else is in it? Bean sprouts actually I not too sure what those are about but anything with beans attached to it I try to stay away from.

Ya know, Charlie,
I'd give it a pretty good Peat score.
Now, personally, I would avoid the rice noodles except for once in a while.
But white rice...Peat says it is "okay" (interpretation needed, there, perhaps),
for some, some of the time, etc--he definitely qualifies,
and as you know I'm kinda anti-starch myself.
But stepping back and looking at it broadly,
the rice noodle part is not automatically damning.

Then, with the cilantro and basil...
The herb&spice thing is very idiosyncratic in PeatWorld.
Peat "hates" a lot of them--like, seemingly, black pepper.
On the other hand, he says he thinks of vegetables as "condiments."
Now, I don't know what he says specifically about basil and cilantro.
But, considered as a small part of the dish,
those vegetables/herbs also would not seem, maybe, to be disqualifying on the face of it.

I don't know how the rice noodles are processed,
if that is okay.
But, at any rate, one could add well-cooked white rice
instead of those noodles.

So...I may've overlooked something...but...
wouldn't you say that,
while perhaps not "optimal"(apologies again Ray-Z! ),
maybe pretty decent, in PeatLand...?

...continuing on evaluating the poster's recipe for a Ray Peat Pho thang...

Josh and Jeanne Rubin have, as part of their Metabolic Blueprint recipes
(aren't they supposed to be Peatian?)
this recipe for a Bamboo Shoot Salad
which includes cilantro.
Not presenting to imply that Peat would therefore endorse,
but...

Pho- Beef noodle soup....the broth has cinnamon, anise, ginger, etc. The Thai basil, culantro, sprouts, lime, chili sauce are condiments you add at the table. I first had this at Vietnamese restaurant (before Peat)I have made it a couple of times using oxtail and all in my family enjoy. Getting the bone broth in the rest of my family is a little tricky. They are not going to drink a cup of beef broth as a rule......As I think about the soup at the restaurant, it probably had MSG.

Specifically on the basil...

For what it's worth, this is from that synopsis on the site

Not Peat, but purportedly passed on from a personal consultation with Peat:

"He avoids all other above-ground vegetables, including greens and many herbs (basil, etc) due to toxins (even if cooked) that far outweigh the benefits."

Good clarification. Never saw that one before. I like to know just what Peat says. Then I can keep it in mind, while I choose how to adapt for my own case.

For my husband, who is not so gung ho, I have to seem to be more tolerant of toxins. As we both learn more, we make more seemingly little improvements.

I guess chili sauce, jalapeños, salsa, etc. are not ideal?
