In reading through the research literature, a number of papers claim that vitamin C in the presence of metal ions will have a pro-oxidant behavior, instead of the usual role of vitamin C being an antioxidant. The two metals you most often see in the literature are iron and copper. This makes me wonder: if you take minerals and vitamin C as supplements, should you avoid taking them together?

Are there any specific guidelines on this, such as take vitamin C 60 minutes or more prior to taking any mineral supplements?
