That sounds really good. Is 10-12 minutes long enough to cook the portobellos?

Long enough for the purpose of the recipe, maybe not long enough according to Peat. If you experiment please report back on the results!

Or you might consider trying making the dough with nixtamalized corn flour (masa) which peat talks very highly about.

I bought some masa harina tortillas today and made "pizza" with them. Feels like eating any other starch. :-D

When I used to cook more often back in the day, I used to make baked grouper fillet topped with san marzano tomato sauce, mozarella, cherry tomatoes and oregano. It's out of this world.
This goes well with few drops of lime as you bite into it.

You can do a similar thing with eggs, except that you'd want to cook the omelette separately from toppings to avoid overcooking the eggs. First I'd grill or roast the toppings in a non-stick crepe pan on mid-low heat, then fry a plain omelette. Quickly and carefully drop toppings on top of the omelette when it's done. Sunny side up eggs might actually go better with this but I haven't tried it before.

Alternatively, if you don't like fish and egg, you can try chicken breast. Pound it thin, crisp one side slightly in a pan with coconut oil while keeping the other side pink/white, then top the other side with toppings. Finish it in a hot oven. The crisped side will make your fillet like a crust and the almost neutral flavour of chicken breast shouldn't hurt how the pizza tastes.
I haven't tried this.

Okay I tested out the Portabello Pizza. I did this:

•Cooked two portabello mushrooms for 10-15 minutes on 400 degrees.
•Pulled them out of the oven and used a jar to smash them down so that they were less curved and more flat.
•Put on medium salsa, and then goat cheese and bacon. Back in the oven.
•Cooked for 20 minutes or so at 400 degrees.

Was quite delicious. I only cooked two, wish I had done a lot more. Not much in the way of carbs :/

These look pretty good but I haven't tried them yet. I'm hoping to find a really large zucchini at the farmers market this weekend.

Meatza is really, really good! It doesn't sound good but it tastes really good. I had it a few times when I was eating low carb before Peat.
