Should I Drink/Consume My Bone Broth That Won't Gel Or Dump It &Try Again

My latest batch had a thick, "fatty" consistencey to it and was sure it'd be the best I'd ever made - to my shock it remained liquid without gelling overnight in the fridge. Does manifest any worthwhile nutritive value - should I go ahead and drink it down?
