SAD diet and Ray Peat

When switching from a SAD diet, to the likes of Ray Peat, what are some things often missed? As in- what do people usually forget to eat more of. Salt? Sugar? Any particular vitamins?

Hope this isn't confusing.

I have read others who take Glycine. Why would one choose this over gelatin? I for one, don't like gelatin.

Glycine helps balance tryptophan. If there is an imbalance from too much muscle meat it is stressful on the body. Historically we ate the whole animal which contained more glycine. So balancing muscle meat with glycine or preferably gelatin results in less serotonin.
