Let’s say you are doing some endurance running or cycling.. you drink orange juice or sugar. You can sustain the stress hormones for longer while using these but if you were to eat rice or some starch it will likely stop you and relax you too much to the point you can no longer continue the endurance at the intensity etc. So what actually reduced the stress hormones the Orange juice/sugar or the starch?

Starch and fruit will have the same effect on your stress hormones. The starch is just a lot more filling (not necessarily satiating) which will prevent you from exercising as intensely. Fruit or juice on the other hand digests very quickly and will not really interfere with exercise. So you can always have fruit during and starch after, depending on what you crave or feel best on.
