I can't stand bamboo shoots but they are a recommended alternative. And I keep hearing mushrooms as an alternative. Anybody know about that?
Mushrooms don't work for me except in small amounts. Too much arginine and I get Shingles flares easily these days even when I take lysine to balance.
But a lot of people like the bamboo shoots.
My carrots keep a long time. I wash them and store them whole. Then peel some and store those. Then, chop or cut enough for a few days at a time, soaking in water. Change the water every so often as the color comes out. Assume a lot of the beta carotene is out of them that way.
I like nwo's method above and use that sometimes too. Just depends what you can live with. I grated for a couple of years and now just slice in strips.
