Hello, I'm having trouble finding the answer to this in the existing threads... once the potato juice is cooked, is it good to consume the liquid and the separated solids? Or just the solids? The liquid tastes a little astringent... anyone know where the oxalates and up in this process?

So, like you, I went through a bit of a confused state given the general lack of guidelines surrounding how to make this. However, I've came to the conclusion (through trial and error) that most of the keto acids are actually in the solid scrambled stuff. In theory, you can just eat that. However I think the juice has a lot of minerals in it too, so I consume all of it. The taste isn't exactly amazing, lol. I use salt liberally when seasoning it, and this is actually probably good considering the salt helps balance the massive potassium content. I've also added cheese to it, for some extra flavor but also for the calcium.
