I get to have a sit-down breakfast two days a week, due to my work. Five days a week my 'breakfast' is coffee/milk/sugar/gelatin. What do y'all have for breakfast when you have a chance to sit down and eat? Today, mine was:

-Two eggs fried in butter
-Large piece of sourdough with marmalade
-Orange juice
-Cottage cheese

Dang. That carne asada omelet looks phenomenal. Thank you for the ideas!

What I like to do is order just a cup of meat and salsa, when somebody makes a "taco run". Then i make my own better tacos, with masa tortillas fried in coconut oil, pork rind nachos and that omelet.

I'm going to swap out the bacon for carne asada. I'm guessing the end result would be nothing short of legendary.
