I use it for my soups/broths... but to be honest I'm sure it's fine just cooked in a pan with coconut oil/butter.

I use oxtails for many things. Once the meat is boiled down and nearly off the bone, pull the meat off and make simple, decadent tacos and tostados! I also put broiled pieces in a pack of Tasty Bite Channa Masala with bone broth and extra seasonings, or broil them in the bone and put in a pho broth with sauted onions and finish it off with Ray Peat carrot ribbons, especially the sweeter white rainbow carrot ones. They resemble noodles! I am never without a ready batch of oxtails. It is the easiest way to get protein and gelatin!
