Would putting a pinch of baking soda in OJ to neutralize the acid also deactivate the Vitamin C (ascorbic acid)? What's the interaction here actually, and would the Vitamin C still be available for one's nutritional needs? Thanks for any info!! ;)

Alright I looked into this a bit further. The baking soda would react to the ascorbic acid and create sodium ascorbate which is the salt of Vitamin C. It's still bioavailable as vitamin C and many Vitamin C supplements are actually sodium ascorbate. Good to know!
