If you mean why he has cream rather than milk with it, he said it's because the fat helps to slow the digestion of the caffeine, making it easier on the stomach.

Eight minutes into this video he says he generally does not drink coffee together with milk. In the context it sounds like he does not drink coffee at the same time as milk, but it could just mean he doesn't mix them together.

I think Peat is just saying that he generally only has one type of drink at a time. So if he is drinking a cup of coffee he won't simultaneously have a glass of milk alongside it. But he could still drink milk and coffee mixed in the same cup, like a "cafe con leche", for example.
